| Whilst tasting wines with my good friend, Forrest Klaffke, he thiefed me up some of his outstanding aged port style wine made with Pinot Noir. It knocked my socks off and I immediately wanted to try my hand at this fabulous creation! After beasting him for information and reading all I could on the process, I decided to take the leap, and what a leap it was! To try and stop fermentation of the Pinot Noir at the precise moment necessary with the addition of the high powered neutral grain was a real challenge. After many intense trails, I finally got it right and this is the result. A very dark, fruit forward Pinot Noir flavor with a major kick! It's outstanding with dark chocolate and a good, aromatic cigar. |
